چکیده

Hazelnut providing the macro-and micronutrients is a constituent of healthy diet. Hazelnut, one most consumed treenut, produced in different countries. The geographical origin influences chemical composition and biological activity several plant foods. purpose this study to evaluate composition, antioxidative capacity total phenolic content hazelnut kernels obtained from countries, including Azerbaijan, Chile, Italy, Turkey. were examined for crude oil, ash, moisture, protein contents. refractive index, iodine value, fatty acid oils identified. In addition, kernels, defatted tested their activities Protein contents hazelnuts countries similar. largest oil yield was determined Chile Turkey (62.35 ± 0.51 % 62.29 0.46 %, respectively). While Turkish showed highest oleic (84.09 0.17 %), Azerbaijan had lowest (78.10 0.48). detected Azerbaijan. Although observed Turkey, potent form. It can be concluded that could contain high amounts fat-soluble antioxidants addition water-soluble antioxidants. results suggested exhibited antioxidant capacity, depending on origin.
